I am feeling a bit under the weather,well alot under the weather so Mr wonderful is in charge of supper. So you know what that, means. Ramon noodles and eggs. I'll be posting again soon when I figure out what's the matter.

Chicken parm
I know I know I need to get better at taking pictures. I'm working on it honest. There is not much ample lighting in this apartment. And we eat later at night when my husband gets off work. Maybe I'll make him get brighter light bulbs and see if that helps:-) I asked Mr. Wonderful which he'd rather have for supper, chicken park or my take on an open face sandwich, we can clearly see the winner winner chicken dinner. Anything for him since he is at work all day trying to sell cars. I'm making the open face sandwiches tomorrow then because that's what I am wanting. Its my favorite thing to get at sit down joints. I'm watching a scary little kids movie on Netflix but my daughter loves it. On that note if your big into scary movies rent/borrow The Posession. We had our power out at 10 last night and it came on at 3 this morning and we had the house lit like a Christmas tree when the power came back on waking us up so we decided to watch the movie Mr. Wonderful rent. Bad bad idea. I couldn't go back to sleep and I'm no were near young enough to be that scared of a movie. Anyway watch it its good. Back to the food, sorry for my tangent..I guess I should say I'm feeding two grown ups and a baby so you can couple, triple whatever you need to.
Chicken parm
1 skinless boneless chicken breast
2 tbs Chicken rib rub
1/2 c Breadcrumbs
1/2 lb spag noodles
Olive oil
1 tsb White wine
Jar of your fav sauce
Parm cheese
Take you chicken breast and split into three ( for this I took and split the chicken to make it thiner so length wise into thirds)
Cut the chicken up into bit size pieces
Mix 1 tbs chicken rub with breadcrumbs and coat chicken
Get enough olive oil to coat the bottom of the pan. Add in the white wine before you heat the oil I did it after on a whim and it smoked and spit oil everywhere
Cook the chicken to brown the breadcrumbs and then add half the jar of spag sauce
Cook the noodle until al dente and reserve and pour 1/4 cup starch noodle water into the chicken sauce mixture
Drain the noodles and add 1 tbs chicken rub to them and pour into the sauce mixture and mix up
Now its time to put as much parm cheese you want and enjoy:-)
My husband always adds more sauce because I don't like it as much hence the whole jar:-)
My itty really liked the chicken this time and it was good for me but Mr. Wonderful loved it and ate it on bread:-)

Chicken and Dumplings:-)
My love had to work a long shift today. 8:30 this morning until 9 tonight so I did some light cleaning around the house, but my itty already got everything dirty looking again. I guess its ok though because she helped me make the dumplings for our meal. Se did a good job:-) a good job making a mess as you can see. After I made the dumplings she put the empty flour bowl on her head. She definatly knows how to make me giggle like a little school girl. Which is sad since I'm way out of school. I don't know what I'd do without her in my life well with out her or her daddy. But that's another post:-) this was a very easy meal to make and took no time at all and hit the spot, a good stick to your ribs soup.
chicken and dumplings
1 skinless boneless chicken breast
2 tbs chicken stock boulion
2 cups of water
Boil the chicken in the water and boulion mixed together. Boil until the chicken is cooked through and then shredd it up. Place it back into the stock water. I added about a tbs more chicken boulion. And a cup more water at this time
Dumplings
1 1/2 c self rising flour
1 tbs veg oil
1 tsp seasoning salt( I like Weber)
Water
I know there's no measurement for the water, I used one of my tea cups.
Mix all ingredients until its not sticky and there's no more flour on the outside of the dough
Pinch of little bits of dough depending how big and how many dumplings you want.
roll them nto balls and add them to chicken and stock
Place the lid onto pan and let the little guys simmer about 3-4 minutes
At the end add a little bit of cornstarch mixed with water if you want it a bit thicker. I did this to make
More of a broth/gravey so my itty had an easier time eating it.
She loved the chicken and broth/gravyd had fun squishing the dumplings before eating them.
We also add pepper to our own because I like mine hot hot and itty does not:-) daddy hasn't had his yet because he's still at work. To bad for him:-)

Mini chicken potpies
More chicken. I just realized I did two post tonight the one with chessey chicken was supper last night and this was tonights. We were to busy sneaking snacks in after my itty went to bed and watching the first season of American Horror Story on Netflix. Today was my huwbands first Sunday off in a long time and we wanted to go to church but it was raining and turning really icy out so we stayed in today and cuddled and watched movies. I should have cleaned but I took the day off and the house looks like I never clean, which isn't true I cleaned on saturday, the other two are messy little trolls. I wanted something easy to pick up and eat and healthy so i decided on mini chicken potpies. We were have a movie night/day and were going to eat in front of the TV like a drive in. I made the main course and my wonderful husband made some pretty wicked potatoes to go along with them. My itty loved both and also the awesome tea her daddy mixed up. It taste like an apple cider which is good since I hate that Liptons lemon ice tea. I love straight up black hot tea.
Mini chicken pot pies
1 chicken breast
2 tbls chicken boulion
2 cups water
1/2 pkg frozen mixed veggies( mine was carrots, peas, carrots, green beans, and carrots)
2 cups Pancake mix( mine was the aldis brand)
3/4 cup milk( or less just until dough is sticky and well mixed)
1/2 tsb season salt
Mix chicken boulion with water and boil chicken until cooked. Shredd with a fork and place back into water. Thicken it a little bit with water mixed with corn starch. Take a muffin tin and spray lightlt with PAM. Place mixed veggies in bottom of each well followed by chicken and the sauce it cooked in. Mixed pancake mix with the milk until blended and place a spoonful on top and spread to the corner of each well. Sprinkle season salt on each in turn. Bake at 375 10-15 minutes or until the tops are golden brown.
My husbands potatoes
3-4 large potatoes
PAM
1 1/2 tbs adobo
1 1/2 tbs webers classic BBQ seasoning
1/4 c BBQ sauce
1/4 c ranch dressing ( next time we are trying avacado ranch)
1/4 c hot wing sauce
Cut potatoes 1/2 inch thick circles and place in baking dish. Spray them with PAM ( he said its better for us then butter so I went with it ;)) sprinkle with both adobo and BBQ seasoning. Cook at 375 20-25 minutes or until tender. Place them on the serving diah and one at a time pour the ranch, BBQ, and wing sauce over the top and enjoy.
Next time I make the pot pies I think I'm going to put dough at the bottom first and then the stuff and more dough on top so I'd have to couple the recipe. This is because all the good sauce stayed at the bottom of each well and I had to spoon it out. I also think one made with beef would be good to so I'll try that as well.
Ooya that tea I'm obsessed with. Its the liptons lemon ice tea and my wonderful husband adds ground cinninmon to it and its so darn good. Itty loves it. That's her eating her amazing dinner while watching Four Brothers with us:-)
Chessey spinach stuffed chicken
I had the wonderful husband stop and pick up some chicken breast on his way home from work for something other then bràts and beef. We been having a lot of red meat lately and my ityy( who is in the pictures:-)) needs lean protein some times so chicken it was. I make an awesome chicken dish called balsamic mushroom chicken but I did not realize I was out of balsamic so I came up with this little jem. I wanted to use pepper jack cheese but the wonderful man I call husband accidently got me motzeralla and i had to make due. Next time I'll use peper jack and then I'm thinking provalone and maybe Swiss and chedder. I'll keep you updated:-) I would use a little more cheese as well but the itty and wonderful ate most of it before I got a chance to put it in the meal. The little sneaks that they are.
I have also watched " The Lorax" and every Tinklebell movie on Netflix over and over and am watching Tinklebell right now waiting for itty to go to bed. We finally( fingers crossed) got her on a good sleep schedule. We are night owls all of us and she's been going to bed at 2 -3 in the morning and waking up at maybe 7 then back to sleep at noon til 6 or 7 at night. That's been our schedule for awhile then all of a sudden its been 9 at night til 7:30 then nap at 12 til 2 or three then bed at 9. We love it because we finally have some us time til we hit the sack around 12.
Any way we had the chicken with stuffing( both itty and loves favorite thing), and oven potatoes. The stuffing was just from a box, I'm to chicken to try my own as of yet.
Chessey spinach chicken
2 skinless chicken breast
Half can of spinach( get as much liquid out)
Half pound of cheese( your choice)
Salt and peper
Season salt
Cut a pocket into each chin breast and season all over including the pocket. Cut the cheese and put some in each pocket and top with the spinach and then more cheese. Bake at 350 for 15-20 mins depending on your chickens thickness. Cook until Chen cooked through and enjoy.
Oven potatoes
3- 4 big potatoes ( my rule one each plus one for pan)
1/2 cup butter melted
1/2 tbs Season salt
1/2 tbs Adobo seasoning
Cut the potatoes about 1/2 inch circles and place in pan. Melt the butter and mix in seasonings. Pour over potatoes and cook 375 15 minutes or until potatoes tender and enjoy.
******Side note: I think I'm going to use fresh spinach next time:-)

Supper January 23
I opened a 6 pack of bràts and tried them two ways, normal and as a soup/jumbo. I have become highly obsesed with saurkrat and could eat it all the time. I hated it until my husband started eating it for his diet to bulk up and I tried it. I could it eat it snack on it all day and night if i could and my love didn't think it smelled weird. For my normal bràt I just put it on a whole wheat bread and added saurkrat and spicy mustard. My husband had added sweet baby rays baffalo wing sauce, ketchup, and sweet baby rays BBQ. I know, I know we are weird. For the jumbo I took three bràts and cut them up and added them in a slow cooker with the new Progressive tomato started soup/sauce. Which are so good so you should buy some, all of the flavors. I liked the mushroom so much and had it over pork chops. I still haven't tried the cheese but plan to with some sort of potato something. Then right before I served it I put cooked rice in the bottom of the bowl and placed the jumbo on top. I hate really soggy rice. The bread I made I want share the recipe because its not how I wanted it so I'll have to wait til I get it right, sorry:-) then I made chocolate cookie dough brownie cupcakes. We had one box of brownies and a little of the toll house chocolate chip cookie sough to use up so I place a small ball of the cookie dough into the muffin tin and topped it with brownie battwr and cooked it to the boxes specifications. All in all a really good supper:-)
Homemade syurp
Please excuse the mess on my stove. I've been a bit busy today making a few things. This is one thing I made. Homemade syurp for pancakes and waffles or in my case buttermilk biscusts. I asked my mom her recipe and realized I didn't have all the ingredients so i came up with my own. It turned out so good. Moms are the best when your in a crunch on something you want to make. She always knows what to do. I'm making cookie dough brownies as we speak and I'll post those today sometime to as well as what I'm making for supper if it turns out, fingers crossed. Its so different with Stephens new job because he on a pretty set schedule and I love that he is. My little cracker jack is starting to go to bed at the same time every night which is wonderful other then the four thirty wake up call.
at the moment she got a hold of an old box of noodles that I'll never use( because I hate whole wheat paste) and dumped it on her bed and is rolling in it:-) she is a fun little thing let me tell you.
Homemade syurp ( my way)
1 c water
1 c light corn syurp
3/4 c white sugar
1/4 c brown sugar
Mix all ingredients in a sauce pan and boil until sugar is dissolved.
let cool a little bit before pouring into plastic bottle and enjoy

Sweet and spicy ground beef
I am running low on ideas for supper for they last couple of nights. We finally just got internet back after a month so I've been going crazy. No Facebook or texting because I use a tablet because we have only one phone which my husband always has. We are in the middle of a job change for my husband. He started at a car dealership today and I hope it goes really well. My little peanut is growing faster and faster and loves almost everything I make her:-) Supper tonight I wanted something Asian style because we went to a Chinese buffet for our two year anniversy and it wasn't good at all really. So i am making up for it by making it at home and I just happened to have a pound of cooked crumbled ground beef to use up.
Sweet and spicy ground beef
1 lb ground beef
1 tsp seasme oil
1 tsp garlic powder( probably could use frsh garlic, I just didn't have any)
1/2 c brown sugar
1/4 c soy sauce
Enough crushed red pepper flakes to make it as spicy as you want
1/4 tsp ginger
1 tbs beef boulian
Brown beef with the oil and garlic and drain when cooked through.
Add the remaining ingredients and cook
I added a little bit of constach mixed with water to thicken it a bit
Serve over rice and enjoy
I am completely obsesed with Orrington Farms broth base& seasoning in both beef and chicken flavor. I have been making the chicken and just drinking it as a throut soother as everyone here got influneza a & b strands of it. Also as the seasoning in my Ramoen noodles. Well time to put my itty to bed. Have a good day y'all
